Solingen thin section:
In contrast to most of today's knives, windmill blades are still manufactured with the principle of "Solingen thin section".
The sanding angle is set high above, making the blade slender and pointed towards the edge.
The result is particularly evident in the high sharpness and edge retention.
This traditional cut is seldom practiced even in Solingen, but does justify the high esteem of Solingen knives all over the world.
